Terri's Bone Broth Veggie Soup


Day is 12 of our thread on~HOW TO EAT SIMPLY TO IMPROVE YOUR OVERALL HEALTH & BUILD RESPONSIVE IMMUNITY~Today's Immune Boosting vegetable dish is Terri's Veggie Bone Broth Soup.

This is a series to follow up Cary's previous posts on COVID-19: Tips for Self-Care and Redirecting Fear. I've been doing a daily post for the past 10 days highlighting VERY SIMPLE veggie recipes in this series so that you will be inspired to focus your self-care towards that which is positive, uplifting, and easy to manage.


In this thread, I'm sharing recipes from several of my Ayurvedic patients and close students, who have been trying to honor the rhythms of nature and have been practicing Meditation with me over the years. They have been learning to live simply and in harmony with nature's laws. As a result, their health has become stronger and their minds are more peaceful, joyful and positive. This is a nourishing recipe filled with many medicinal spices, colorful nutrient-rich veggies, and added bone broth~a medicine for those with auto-immune or compromised immunity. This one has the added touch of 2 egg yolks. Enjoy!


Terri's Bone Broth Veggie Soup


2 TB Organic Cultured Ghee

1/4 tsp each of ground Cardamom, Cinnamon, and Cloves

1/2 tsp Turmeric

1 large Black Cardamom Pod

1/2 tsp ground Black Pepper

Himalayan Salt to taste

Handful of Organic Celery

Handful of Organic Rainbow Carrots

1-2 Organic Yellow Summer Squash

1 bunch Organic Dark Leafy Greens (can use Kale, Chard, Spinach or use mixed greens.)

1 bunch fresh Organic Chopped Cilantro

2 small Organic Purple Sweet Potatoes

2 Organic Egg Yolks

16 oz or more as needed, Organic Bone Broth or Nightshade-free Vegetable Broth

Extra water as needed


Start with two large scoops of ghee in a mid size sauce pan.

Warm the ghee on medium until liquid, then add a masala of ground cardamom, cinnamon, cloves, pepper and turmeric to the ghee once it's melted, just long enough to begin to smell the aroma of the spices coming out of the pan.

Then add sliced celery and rainbow carrots and let them simmer on medium for about 10 minutes.

Next add Bone Broth and bring it gently to a boil.

Then add 1 large black cardamon pod.

Cube up 2 small purple sweet potatoes and add them to the soup.

Add some extra water as needed.

Add Himalayan salt to taste.

Then add sliced yellow zucchini and chopped dark leafy greens.

Right at the tail end add two egg yokes, wisk with a fork to swirl into soup.

Top with freshly chopped cilantro.
