Deb's Asparagus Hash

HOW TO EAT SIMPLY TO IMPROVE YOUR OVERALL HEALTH AND TO BOOST YOUR IMMUNITY


This is a series to follow up on the previous posts on CORONA VIRUS ~ Tips for Self-Care and Redirecting Fear. In this thread, I'm sharing recipes from my Ayurveda students and patients who have been dedicated to living simply with the flow of nature. As a result, their health has become stronger and their minds more joyful and positive! We are highlighting VERY SIMPLE veggie recipes so that you can try a new meal and be inspired to focus your self-care towards that which is positive and uplifting.


Deb's Asparagus Hash


Ingredients:

~2 TB olive oil

~1 pound organic white sweet potatoes, diced

~1/2 red onion, chopped~(Best to only use onion & garlic when you have a cold coming on, otherwise these extremely pungent foods will strip your gut of its healthy bacteria if used too frequently-otherwise just leave the onion out).

~1 pound organic asparagus, trimmed & cut into 1 inch pieces

~4 organic eggs

~1 Thai Chili Chopped, optional

~1/4 tsp of turmeric

~1/2 tsp each of cumin, fennel, and coriander

~White Himalayan salt & pepper


Heat oil over medium-low heat in large skillet. Add the 4 spices, stirring until lightly toasted and the aroma is filling the air. Season potatoes with white Himalayan salt and pepper and add to skillet. Cook, covered until browned for 10 minutes, then stir and cook covered until tender, approximately 15 minutes or a bit more. Season asparagus with salt and pepper. Add to skillet, cook covered 3 minutes.

With a spoon make 4 nests in hash and crack an egg into each. Cook covered, until whites are set, 5 minutes.
